Mandarin Orange Cake

  • 1 pkg yellow cake mix
  • 11 oz mandarin oranges plus juice
  • 3 eggs
  • 3/4 C oil
  • 16 oz crushed pineapple, drained
  • 1 large pkg vanilla instant pudding
  • 8 oz Cool Whip

Mix first 4 ingredients together and bake according to box instructions.

Fold together last 3 ingredients & frost cake.

Pizza Pasta Casserole

  • 2 lbs hamburger
  • 1 large onion, chopped
  • 2 jars spaghetti sauce
  • 1 pkg (16 oz) rotini, cooked & drained
  • 4 C shredded mozzarella cheese
  • sliced pepperoni

In a large pot, cook beef & onion over medium heat.  Stir in sauce & pasta.  Transfer to 2 greased 9X13 baking dishes.  Sprinkle with cheese.  Arrange pepperoni on top.

Cover & freeze 1 casserole for up to 3 months.  To use frozen casserole, thaw in fridge overnight.  Bake @ 350 for 35-40 minutes or until heated through.

Bake the 2nd  casserole uncovered @ 350 for 25-30 minutes or until heated through,

 

Biscuit & Hamburger Casserole

  • 1 lb hamburger
  • onion
  • 1 can cream of mushroom soup
  • 1 can of water
  • 1 can of big refrigerated biscuits (8 count)
  • sliced american cheese

Brown hamburger & onion.  Add soup & water.  Heat to boiling.  In bottom of 9X13 pan, place biscuits & put cheese on top.  Add hamburger mixture.  Place sliced cheese on top.  Bake @ 350 for 30-45 minutes.

Slow Cooker Pulled Pork

  • pork shoulder/ butt
  • 1 can root beer or any dark colored pop
  • BBQ sauce
  • hamburger buns

Place the pork in a slow cooker.  Pour can of pop over the meat.  Cover & cook on low until well cooked & shreds easily, 6-7 hours.  Stir in BBQ sauce.  Serve over hamburger buns.

Chicken Casserole

  • 6 chicken breast, cubed & cooked
  • 6 oz Uncle Ben’s wild rice
  • 1 can chicken broth
  • 1 can mushrooms, drained
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 C slivered almonds
  • 1 box herb stuffing mix
  • 2 sticks butter, melted

Cook rice according to package directions, substituting broth for water.  Stir together rice, chicken, mushrooms, soups, & almonds.  Place in a greased 9X13 pan.  Sprinkle dry stuffing mix over top.  Drizzle melted butter over the stuffing.  Bake @ 350 for 30 minutes uncovered.

Fizzles

  • 3 eggs
  • 1 C milk
  • 1 C flour
  • pinch of salt
  • stick butter

Mix first 4 ingredients.  Heat 9X13 pan in 500 oven.  Butter pan.  Bake until bubbles form & brown.

White Christmas Hot Chocolate

  • 4 C heavy cream
  • 12 C milk
  • 24 oz white chocolate chips
  • 1 tsp vanilla
  • mini marshmallows

Combine heavy cream & milk in slow cooker, then stir in white chocolate chips.  Cook on low for 2-3 hours, stirring occasionally.  5-10 minutes before serving, stir in vanilla.  Serve with marshmallows.

Taco Soup

  • 1 lb lean ground beef or turkey
  • 1 medium onion, chopped
  • 1 can chili beans, undrained
  • 1 can black beans, undrained
  • 2 cans stewed tomatoes, undrained
  • 1 can mexican corn, undrained
  • 1 pkg dry ranch dressing mix
  • 1 pkg taco seasoning

Combine & simmer for 1 hour.

Meatballs

  • 3 lbs ground beef
  • 12 oz evaporated milk
  • 1 C oatmeal
  • 1 C cracker crumbs
  • 2 eggs
  • 1/2 C chopped onion
  • 1/2 tsp garlic powder
  • 2 tsp salt
  • 1/2 tsp pepper

Combine all ingredients & shape into walnut sized balls.  Place on wax paper lined cookie sheets and freeze.  Store in freezer bags until ready to use.  When ready, bake @ 350 for 45-60 minutes.

Pumpkin Pie

  • 1 can pumpkin
  • 3/4 C sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 2 eggs
  • 1 can evaporated milk
  • 1 deep dish pie crust

Preheat oven to 425.  Mix ingredients together.  Put in pie crust.  Bake for 15 minutes.  Reduce temp to 350: bake for 40-50 minutes or until a knife inserted near center comes out clean.  Cool for 2 hours.  Serve or refrigerate.
